I have a Trinidad and Tobago passport and have obtained a multiple entry Schengen Visa that I obtained from the Dutch Embassy. I would like to visit both Holland and Poland. I was told with a Schengen Visa, the first country you visit has to be the one which issued the Schengen Visa. Is this true? Which means I have to visit Holland before I go to Poland.

Not necessarily. The visa should be issued by either the first country, or the country of your main destination.
Hien is right - technically. In practice, you are likely to meet with considerable suspicion if you try to enter the Schengen area in another country than the one that has issued your visa. I'd recommend that you save yourself potential trouble; besides, I can't imagine why you would want to start in Poland when coming from T&T (flights to P should be MUCH more expensive than flights to NL).
