I checked with our Vegas hostels and they have women only, mixed dorm, and rooms for couples. Not sure what is offered in other cities.

It varies, and most have a mix of single sex and mixed dorms. For YHA, if you want to stay with your partner/family/kids in the same room, you'll have to get private rooms (usually 2-4 beds) because the dorms are all single sex.

I'm in China and I've only seen mixed, but I'm sure that's not the case everywhere

It completely depends on the hostel.

My experience with Canada is that no matter what you indicate in your booking, you'll end up in mixed dorms.

Most often there will be mixed dorms with a few female-only dorms
