Shyang,
Don't bother pre-booking with Mekong Express. Once in SR, I would have your taxi driver take you to the Mekong Express office. Book your seats for the day you want to leave. Then check-in at your GH, go get your Angkor Wat passes. You will want at least 2 days in SR to trudge around the rocks.

With a group, I would arrange to have a taxi driver meet you at the REP airport. Here is a place to pick a tuk tuk or taxi driver. Good luck with your planning.

VN has many overnight buses, Cambodia: no. With 8 of you, I would contact a taxi/van driver for airport pick-up. Have your driver take you to Mekong Express first. Book your tickets for HCMC. Then check-in to your GH. None of the Cambodian bus companies are set-up to take advance bookings from foreign countries.

If you are that concerned, I would e-mail your driver and ask him about getting 8 Mekong Express tickets for the day you want to leave. They are used to advance bookings and may be set-up to charge your credit card for tours, tickets, etc. I think that is your best bet. Good luck.

From Ho Chi Minh to Hanoi, as far as I know, there are no non stop bus, you have to transit in Hue. It takes you about 2days 2 night on bus (including transit time), and the price about 40$
Maybe you can check flight ticket with Jetstar Pacific but alof of people don't believe in services of Jetstar, some times they cancel or late flight...
About Halong Bay, there are alot of boats in Halong, and it ranges from highest to normal one to meet the needs of you, so can you tell me your budget, I can tell you which boat is suitable with you.
