They do!
They just weighed mine last week although I'd done an online check-in- mind you, this was the first time they'd done it, but still. I got a bit of a mouthful from them because my carry-on baggage was 11kg, but didnt get charged extra. They seem to be pretty picky about it, but I guess it depends on the airport, the staff and on how full that particular flight is.

Who weighed your bag?
It's not weighed at security, nor at the boarding desk. Nor will Ryanair weigh it if you have checked in on-line as there is no need to go to their desk?.
Interesting to find out where it was weighed and who weighed it.

It depends actually on airport. I have been very happy because I'm never been asked to weight my hand luggage (it is usually overweight ), but I know in some Airports like in tampere or paris they do and also check if it has the right size. The same thing is with luggage pieces - i have travelled with my board suitcase + laptop separately, always successfully, but have heard sometimes it's a problem.

In Paris-Beauvais they don't weigh the bag but they do check on the size (the bag must fit in the slot and they do check religiously on everyone) and they're also very strict on one bag and one bag only for hand luggage.
