As it looks now, we'll go to Sweden and get his passport stamped when his WHV expires. Then he'll stay the last month in Denmark (going back by bus nobody checks your passport), then fly out of Goteborg or Stockholm to London.
It's pretty annoying, but we can't risk him being black listed from the Schengen countries for 3+ years.

Which is why he should not return to Denmark.
In the end my boyfriend booked a ticket from Stockholm to London, wherefrom he would catch his Australia-bound flight.
When his visa expired on April 3rd, nobody from immigration contacted us and he had no problem being 'invisible' in Denmark. We went to Stockholm by bus and train. As he was flying Ryanair, he had to go through their 'VISA checkdesk' to make sure he was OK to go on to London. They let him through without a problem, they didn't even mention his Danish visa sticker.
So he overstayed his visa by 1 month without any trouble... Phew.
