I agree, a tour would be a waste of money in Vietnam because it's so easy to DIY. Use one or all of the free student guide services to see Saigon, Hanoi and Hoi An (you need to prebook each - Saigonhotpot, Hanoikids and Danangkids) - and they soon become friends too! It's a great place but it does have a few problems that you should know about - nothing very serious - the usual scams that a traveler needs to know about. If you read many of the forums you will see them all listed - and if you have any kind of brain at all, all you need do is use common sense. I think one of the things that makes SE Asia so fascinating is the fact that it's not "just like home". The biggest "do" in my book is the Vietnamese people themselves - wonderful, welcoming and quite happy, so many smile and say "hello".

I am thinking of trying the different types of food there... such as snake, snakes blood, etc. Any suggestions? Anything I should watch out for?

How long do you think I need to see most of the country?

You will around 15-21 days to go from HCM to HaNoi on the open tour bus. Yes, you can do it in less time, but then you would be on/off buses almost everyday. 3-4 weeks is perfect to see all of VN.
