look into treeplanting...hard work, big money if you go to the right company (of which i know none), but apparently the experience of a life time!

Try a resort town like whistler (or banff in alberta, but right on the border). They are always full of foreigners just coming here temporarily. You would definitely need a visa.

Or try fruit picking in the okanagon during the summer. You might even be able to do that under the table with no visa.

For fruit picking go to Vernon or Kelowna in British Columbia- you will be guaranteed to get a job. Otherwise try a resort in the Canadian Rockies and chop wood or something or work at a front desk or in a restaurant. I guarantee no one will hire you without a visa and a SIN # anywhere but a cheap friut picking stint along with some drifters and drunkards. You can also get a cherry picking job like that out in Ontario, I've heard. If you know about maple syrup, you might be able to tap/monitor maple trees for maple syrup for someone out there (Ontario) if you are there in the right season.
