Have you thought of Morocco? There are direct flights from London to Tangiers and probably Casablanca. We were there in September and loved it. I would highly recommend a few days in Fes. The medina there is a Unesco World Heritage Site, and is incredible. We stayed in a riad - old homes of wealthy merchants that have been converted into very nice lodgings. We stayed in Riad Laayoun, and it's beautiful. The owner is Jean Claude who is actually French. The riad is in the medina, has about 5 rooms, all very nice, and a beautiful courtyard on the main floor, open to the sky. There is a wonderful rooftop terrace where breakfast is served. I think I remember rooms are around $100-150 depending on which one you choose. The website is www.riadlocationfes.com Check it out and see what you think. This place was recommended to us by a colleague of mine. He also recommended Fettah, a state licensed guide, who took us around the Medina and several other places. Jean Claude can arrange that if you decide you like that idea.
All riads in Morocco have cooks, and you can request dinner in the riad any night. We had two fabulous dinners in Laayoun, including wonderful music, lively conversation, etc. with Jean Claude, his friend and another couple from France who was also staying there. The restaurant that we went to twice is Fes Et Gests, and it was charming, great food, and inexpensive. These recommendations can also be reviewed on Trip Advisor.
Another wonderful, simple, beautiful smaller town is Chefchouen. It's about a two hour drive east of Tangiers. It's up in the mountains, and is charming, easy to get around, beautiful scenery, and a medina. We stayed at Casa Perleta, and it is very charming. Request the room on the top floor with a huge terrace overlooking the town and mountains if you decide to go there. The manager is Begonia, who is actually from Spain. It's a great place and they couldn't be more accommodating. If you decide to go, Begonia would arrange to have a driver meet you at the airport and drive you to Chefchouen. Or you could take a bus, but it would take longer. www.casaperleta.com
