We are food and photography lovers.
In April/May 2012 we would like to visit London, Amsterdam, and somewhere in Spain (Seville, Barcelona?) for about 21 days.
Our question is: How would one best do this vacation? We are open to fun and creative travel, but we are not on a tight budget, just so you know.
Also, if you know anything about technology, how would we best be able to use our cell phones/iPad and get email?
Did I forget anything?

You can spread out 7 days each to those places. Plot out the places that would fit to your interests. Find the tops tourist spots good for your photography skills and dine at the best restaurants there is. Anyway, you said you're not budget-tight.
i would advise getting a sim card in each country that u go to. most of the pre-paid plans have internet bundled.
for london, i used 02 and it was 10 pounds for a month, inclusive of 500mb internet (should suffice for 7 days), 300 local texts. u get to use the 10 pounds for calls. and also if u exceed 500mb, internet is unlimited at 1 pound a day. u can get ur free o2 sim card with a 10 pound reload voucher from convenience stores (similar to 7-eleven) like tesco express, WH smith, asda etc. in london.
can't advice for amsterdam and spain, but i'm sure they have similar pre-paid sim plans.
since u're staying 7 days in each place, u can consider a fun accommodation experience like renting an apartment instead of staying at a hotel. i used roomorama to book my apartments, so maybe u can check that out...
