hi, i'd really appreciate it if anyone with ANY knowledge on volunteering in south america (or anywhere infact) could recommend any organisations to go with.
how much is acceptable to pay to go out and volunteer? it seems the norm is £2000 for 2 months including flights. is that true? i just dont know!!
Ive looked up some groups on the net, ie i-to-i and travel to teach but im just not sure if theyre legit or are gonna rip me off! so if any of you lovely people could recommend i would be really grateful!
Try checking out an organisation called wwoof. Homepage http://www.wwoof.org. I have heard they are good and reliable. You also have a choice of a number of countries to volunteer in.

The ones you mention are quite big and are pretty commercial organizations. There are organizations that do it for less, but even then you'll probably find that you end up paying if you want to arrange it before you leave. Another alternative is to try and find something after you have arrived in South America. It will probably save you quite a bit of money as the agents commission is cut out...
BUNAC offers a good program in Costa Rica. Not quite sure what it costs though...
