There's actually plenty to do in the Toronto and surrounding areas in 7 days for sure. There are national parks around if you want to get some nature in and there's a variety of things to do in the city. Ottawa is a 5 hour drive away and if you stick to downtown can see most of it in a day or two. From Ottawa Montreal is 2 hours away and again, big city, tons to do every night.

You have to go to Vancouver! and while your there you may as well go to Whistler too!
I spent a month in Vancouver and am planning to go back next year for alot longer because its such an amazing place.
A couple places i loved was:
Capilano suspension bridge
and if you get the chance you have to do the Grouse Grind! I missed out on this as i ran out of time but i've regretted it ever since!
But yeah, you need more time there. Canada is such a huge and fantastic country!

I thorougly enjoy Victoria which is on the West coast by Vancouver. It's not exactly your most touristy place but it's a very relaxed little town with dozens of street performers and little shops to visit. It's very peacefuly and beautiful during the summer!
