is it neccessary to do the online vietnam visa on arrival to gain access when flying in?

or can you take care of it once you land?

You can do it when you land, but risk is queues are longer.

We did ours before we left home at Vietnamese Consulate and it was done in 4 days and then just straight through immigration on landing.

You must have some valid documentation for Vietnam before you travel - without this, no airline will let you aboard. You must have either a valid VN Visa or a VN VOA Approval Letter. You cannot simply walk up to the visa window at Saigon airport and buy a visa.

If you try to cross a land border, you must have a valid VN Visa (the VOA is only for air arrivals at any Vietnam International Airport).
