The walking on water has to be that there is something right under water. You can clearly see in some of the shots that he's partly under water with his shoes (maybe extra thick soles to conceal it more). In the second one, the guy on the right with the big black jacket seems in on it, as the two holding the jacket have to be. My bet is he gets under the jacket of the guy on the right, and a different guy walks off.

The third is more puzzling, but there's a guy behind him holding a suspiciously similar looking bottle?!

Speaking of illusions, here's a Norwegian one where the guy gets to two girls to swap underwear... in all these my first thought is that the targets have to be in on it, right?!

I have seen the plexiglass under the water trick, but that was in a swimming pool. Steve is a very long way out in the River Thames. One major undertaking to install plexiglass that far out.

Second trick. I guess. It does seem to be Steve on the other side of the glass, but it could be a double. That was how Siegfried & Roy pulled off many of their illusions. Roy had a cousin that looked enough like Roy to fool everyone.

I was thinking some kind of 'floating' pontoon, weighted down just enough to be right under water, and possibly moved by divers or something. It would indeed be quite the operation though, regardless of how it's done.

I think the bottle one is especially maddening. He clearly looks to be doing something with his sleeves and the bottle, but it is the phone of the guy that gave him the bottle... so it's got to be the bottle that holds the trick. Maybe he already does some kind of switching when pouring out the beer?
