My and my boyfriend will be celebratng New Year's Eve in Sydney this year and will have until the 16th of january to travel around Australia. It's a bit difficult to decide where to go as we have read that in some places it will be either too hot, cyclone period, very touristic,...
Does anyone have some tips for us? We like to enjoy the beautiful nature of Australie and prefer places that are not over-touristic. We are open to take some internal flights.

Tasmania; specifically Cradle Mountain and around. It's almost comparable to being in New Zealand, nature-wise.
I imagine it'll be quite touristy that time of the year - but you shouldn't have too much difficulty finding a couple of not-quite-so-popular hikes and getting away from any hypothetical crowds.
South Australia is worthwhile, especially around the Eyre Peninsular. It's wasn't crowded when I went in January 2011 and has beautiful beaches and camping areas, I've got some pictures in my gallery you can check out if you're interested.
