It's hard to say for sure, because technically you are supposed to have a reservation at a hotel and all that. And I suppose if the border guy is having a bad day he could ask to see the details. And if the visa office is having a bad day, they could check with the hotel and reject your application if it's not all right. However, I really doubt any of that will happen.
I've gotten about 10 different Chinese visas over the last few years. Every time I've picked a random hotel out of a guide book and wrote the address on the application, with no intentions of ever booking or staying there. I've never been refused a visa. I've also entered into China about 60 times (usually via HK, but also via Macau/Juhai, or flying into Beijing, Shanghai, Kunming, and Guilin) and I've never been asked about my hotel, or been asked any questions for that matter. They barely look up to see that it's actually me in the passport picture.
