Hey I arrive in Sydney in September and Im looking to do fruit picking in Griffith NSW to allow me to apply for my 2nd year visa.
I was wondering if I have to do 3 months work all at once? and can I use my 2nd year visa in a few years? or do I have to use it straight away.

Any advice will help thanks :)

No. It can be spread out over time; a few days here, a few days there. As long as you hit the 88 days total, you'll be good. The department of immigration has the full details

and can I use my 2nd year visa in a few years? or do I have to use it straight away.

You can use it in a few years, just as long as you'll not yet be aged 31 when applying. (As with the first visa, you have a year from the moment that the visa is granted to travel to Australia, and then a year from date of entry before the visa runs out.) (Details here.)
