You shoudnt have any problems using a Thai sim in an unlocked UK phone

Probably won't have a problem. Anyway, internet shops are easy to find. No problem sending emails home when needed. You pay from around 20 baht to 60 baht an hour to rent a computer in a no frills, basic internet shop. (Fancy coffee houses a little more.) If you have a computer with you some hotels have free wifi.

Sometimes it is better to not be reachable 24 hours a day - every day!

You surely won't face any problem with the thai sim, We used our phones HTC One & Nokia handset with the Thai Sim and never faced any problem.

yes, you can. I personally use thai sim on my US phone. Occasionally you would receive some SMS in thai characters, you can choose to ignore them or you can ask locals what it is about.

To avoid getting SMS with thai characters, when you are buying the sim, ask the local salesman to set the sim setting to English. It is very useful so when you check your balance, it is in english. :)
