In Houston Texas there is a funeral museum. It is not macabre at all, it is very fascinating. There is a recreation of things used for Presidential finerals as well as several "Pope Mobile's" The exibits are interesting, especially the casket collection. Again, it is not a macabre thing at all but details the history of the funeral business with some fantastic artifacts.

Het Rijksmuseum - Amsterdam
There are probably (for sure) more but these are the first that came to mind
My favorite in Paris are
- quai d'Orsay
- Marmottan
- Carnavalet
Of course le Louvre is a must see, but i've been there often enough to skip it now...
