I am going to travel the East Coast of Australia for 2 months in January and February next year. I am going to start my journey in Cairns - a five day scuba diving trip has caught me eye so I've decided Cairns is my starting point and I'll be travelling down to Melbourne. I have looked at various travel guides and have discovered the main traveling parts of the East Coast (going south) are:

Cairns
Magnetic Island
Airlie Beach
Agnes Water
Fraser Island
Noosa
Brisbane
Gold Coast
Byron Bay
Sydney
Melbourne

Is there anywhere missing from this list? I want to see as much as possible. Is there any activities in these locations that are recommended? I'm guessing there's plenty of hostels all over, how much money would I need to take? I am going to have around 3/4 thousand GBP to spend whilst I'm traveling - is this enough?

I don't know how much you'll be able to see, scuba diving around Cairns in January. January is the height of the "wet season", which means very frequent (and frequently torrential) rain, which at the very least I'd expect to be bad for visibility. I'd recommend sometime between May and November for this particular trip, or alternatively sticking to the south or west coast for this particular time of the year.

Agree with Sander - Jan/Feb not a good time for northern Qld - very hot and humid. Melb in Feb can be very hot too. Strongly suggest re-booking for a better time. Suggest August/September in Cairns and Melb in Oct/Nov is good but changeable. From Melb, suggest the Great Ocean Road, BUT allow a coup[le of days to do it.
