I live there, and can offer answers to any questions you might have.

As for things to see and do - the CN tower is the tallest freestanding structure in the world. The Hockey Hall of Fame is there, which is Canada's unoffical game. The ROM (Royal Ontario Museum) and the AGO (Art Gallery of Ontario) are key museums - a little off the beaten path museum is the Bata Shoe Museum.

Lots of good places to eat and drink - Toronto is a very multicultural city and you will be able to find almost any genre of food.

When my bf and I were there in December we visited 'the Rex' - apparently the best jazz club in Toronto. I really enjoyed it (especially since it was non-smoking)!
At Niagara Falls it would probably be worth checking out the evening light display and getting a bottom up view of the falls - either on land via the 'journey to the bottom of the falls' or on one of the boats. The falls truly are spectacular, but once you've seen them you might not find a lot to do in Niagara...perhaps plan to stay a weekend at max.

when are you planning on going? there are some great festivals too: jazz festival, carnival etc. etc. Niagara falls is only about 2 hours away, so if you don't have much time one day is long enough. I love going to the different areas of toronto like little india, greek town, china town, little italy and others for really good restaurants.
