I would give Kraków around two days for the sightseeing, go to Auschwitz (worth it) for one day is enough. I would recommend to visit our mountains- Zakopane is full of apartments to rent.
If it is for one week only, I think it is too short term for the apartment rental so i would rather go for hotels

Thank you very much Zosia_w_trasie!! Any hotel recommendations? We are not really experienced hikers , is it still fine to visit the mountains?

You can search online as there are lots of hostels, to be close to the center choose 'enter' or Kazimierz which is a nice area. June is fine for the mountais just be prepared for the crows on the trails :) You can choose some short distances for the start like Polana Rusinowa and then go from there to Gęsia Szyja - just google it :D It's a nice walk, even elder people do that and there is a super nice view over the moutains :)

Radisson Blu Hotel Krakow is one of the best hotels to stay, you can contact the hotel and check if rooms are available there
