2. What all activities I can fit in this plan ?

A friend and I spent a week in Iceland in May 2017. We contacted a company in Iceland (online and by phone); and it arranged a rental car and overnight stays, mostly in farm houses, in Gullfoss, Vik, Hofn, Egilsstadir, Lake Myvatn and Borgarfjordur. Since we only had a week, the company advised us not to stay in Reykjavik. We flew on Icelandair from London to New York; and took advantage of the airline's offer of a free stopover in Iceland (no additional cost for stays up to seven nights).

Travel in Iceland is not inexpensive. My friend and I shared costs. We paid a total 2,608 euros to rent a car and lodging. We spent several hundred dollars for fuel.

See this link for the current cost of gasoline:

We used our credit card for all purchases, including fuel, food, pay toilets (the latter averaged US$2), etc.

I could only assume you are renting a car? The easiest way getting around. I never used a public transport while in Iceland so can not comment on that.
