I'm planning to fly with a few friends to Croatia, we aren't looking to be in touristy spots, we want more of a wilderness / exploration trip on a budget and not spending a lot of money.

Id love some advice on this topic.

In my experience you won't find anywhere that isn't touristy in Croatia. For places with less tourists you might want to look at exploring the Istria Peninsula. There are lots of traditional villages and the areas aren't as overly developed as the southern coast. Around Osijek is less touristy and they also have interesting wetland areas for visiting. You also have the area around Varazdin that doesn't get a lot of visitors but is more of a wine region than wilderness. Krka National Park is large wilderness area with many natural formations and some archaeological sites but you do need a vehicle to get everywhere. On the islands there is Kornati National Parks and Lastova Nature Park. And yes Lake Plitvice is touristy but if you love natural sites it really is unmissable. To avoid some of the tourists I suggest staying nearby so you can get in as soon as it is open then you can have the place pretty much to yourself for a hour or two.

Most of the tourists in Croatia are along its coastline and islands, because seaside is what Croatia is mostly famous for, and a tiny percentage of tourists in areas that are not on the seaside can be found in Zagreb and in the Plitvice national park. Given this, everywhere else in Croatia that is circa 50 km away from its seaside, is almost tourist-free area ;)
