Looking to branch out and try a different resort this time after several trips to Valentin Imperial Maya and Excellence Riviera Cancun.

Resorts not requiring reservations for dinner is a must, must be free to eat at any restaurants at the resort for dinner and not be stuck to a buffet. Must have a good beach, good pool scene is a bonus, as well as being tucked in the jungle, and being adults only.

Can be in the Cancun/Playa Del Carmen area, Cabo, or Puerto Vallarta.

Any suggestions?

Try the forums on TripAdvisor (not the reviews at least to start with), they are very active with reports and questions about AI resorts in the Riviera Maya.
I've only stayed AI once, at the Akumal Beach Resort, now remodeled and expanded to the Akumal Bay Beach and Wellness Resort, or ABBWR. It has the great beach, several pools and most restaurants are casual to dressy casual (no tank tops). It is not AO (Adult Only) but does not really get many kids or cater to them. Great staff and lots of repeat customers.
There is also Secrets Akumal next door, it is AO, great beach, not sure about dinner ressies.
Catalonia Royal Tulum on Xpu-Ha beach is AO with no dinner reservations and a smaller footprint than some of the mega resorts like Grand Palladium.

My only thought here is that every place has its strong side, some will have better food, better beach, better restaurants. All places mentioned are great, just be very careful at any resort, since what you are wanting is by no means budget friendly, don't get tricked by their "free gifts". All places you mentioned have record of scamming tourists.
