Does anyone know of the best travel portal to buy flights through with the option of buying additional protection incase you wish to cancel flights or change at the last minute.

Generally people advise on here to book direct with the airline in order to have the least hassle with changes. I would be wary of any 3rd party portal.
I have always been very, very wary of using 3rd party 'portals, and even more so now. Why? Because the contract is with the portal and not directly with the airline, hotel or resort. That makes it much, much harder to get your money back if anything goes wrong. There have been many, many cases of airlines refunding flight costs due to Covid cancellations but the 'portal'/3rd party site not passing that money on to the customer.
At this time I'd strongly advise anyone to book directly with the airline, preferably using a credit card, and also to have good travel insurance in place. Both can help when seeking refunds.
