I have trawled the Internet for this info and can't find anything... we have returned from Spain yesterday and will be flying back out on Saturday (day 3). Do I still need to take day 2 test and are we allowed to fly back out without the result?
Gov website says you must book a test even if you are leaving before day 2 and don't use it, but anything after that is unclear.

Spain is on the UK's amber list and you are here on day 2 so you must take the test. It's also the right thing to do so, if you test positive, you can warn any UK citizens with whom you've been...and will be...in contact.

The government won't know you're flying out and the airline won't check how long you've been in the UK.

The only thing that matters is the entry requirements of the country to which you are flying. Airlines won't allow you to board if you don't meet the relevant entry requirements.

Spain requires proof of full-vaccination or a negative test taken within 72 hours of departure.

If you have proof of full vaccination there won't be an entry issue. If your day 2 test results come back positive you should, of course, take the appropriate action whether you're in the UK or not.
