I would really appreciate it if you can help me. I am trying my best to book an appointment for my July trip in Rome but sadly they currently do not have any free appointment to submit my schengen visa application at the VFS London office.
Has anyone encountered this problem this year? I had this issue last year but it feels like it is more challenging to book an appointment now.

It's not at all unusual for people to have difficulties getting visa appointments in the UK....and not just for Schengen visas.
If you had similar difficulties last year surely you should have applied even earlier this year?
Obviously you should check for cancelled appointments every day but VFS has 3 offices in the UK: London, Edinburgh and Manchester. Have you thought of applying through Manchester or Edinburgh? You may consider the journey and additional cost worthwhile.
VFS also offer a 'Visa at your doorstep' option in the UK. It'll cost you £175 + their travel costs but, again, you may think it's worthwhile.
