I want to travel from Turkey to Thailand using any mode of transport available except Flying !!!
Also avoiding Afghanistan and Pakistan if possible.
Any suggestions would be great and are there any potential visa problems I’m a UK citizen

Yes. Many countries require you to apply from your country of citizenship (i.e. the UK). Visas for all citizenships are not automatically available at a country's border,,,and they're not automatically granted even if you apply from your country of citizenship. Additionally, visas vary in validity so you'll have to time your journey very carefully.

Some countries still require proof of negative Covid tests and/or vaccination documentation.

You should be aware that if the FCO site advises against all, or all but essential, travel to a country or part of a country any ordinary travel/health insurance will become invalid. However healthy you think you are, accidents can happen to anyone, anywhere at any time. If you don't have travel health insurance and cannot meet the cost of any treatment you need...or if you die... that financial burden will fall on your family/friends. The UK government does not pay for medical treatment abroad, nor will it pay to repatriate you (medical repatriation flights can cost tens of thousands of GBP) or your body, nor will it pay legal fees/fines etc if you are accused of breaking the law and nor will it automatically negotiate to get you out of prison.

At this time I can see no route which avoids Afghanistan, Pakistan and other areas of ongoing conflict in places where the FCO has advised against all or all but essential travel ('essential' does not mean a traveller who just wants to avoid flying). I think you will have to amend your plans

I once traveled on the Trans-Mongolian from Beijing to Moscow and a fellow passenger who dislikes flying said he travels to London from Southeast Asia primarily by rail.

Several cruise lines travel from ports in Europe and the Middle East to ports in Asia.

The Trans-Siberian would certainly have been a potential option in the past but at this time...and I suspect, for a lengthy period to come... the UK government's advice for UK citizens is that the whole of Russia is 'do not travel'. UK citizens already there have been advised to leave.

Additionally, sanctions mean that Visa/Mastercard cards issued outside Russia do not work in the country and 'it may not be possible for you to access your funds through Russian banks':

There used to be a ferry route from Baku to Kazakhstan, so I wonder if a route Turkey - Georgia - Azerbaijan - Kazakhstan - China would work?

I don't *think* any of those are "advise against all travel", though you'd want to steer clear of the nagorno-kharabak region in Azerbaijan.

Ah, I did some further digging and apparently the land borders into Azerbaijan are still closed due to covid till October. Is your trip after that?
