Definitely take a day trip Brugge - it's about an hour away from Brussels by train. It's an absolutely gorgeous little town, full of canals and beautiful buildings. When we were there, we picked up a chocolate waffle from a market set up in the main square, then sat under an awning on a terrace in the pouring rain and drank the best hot chocolate ever. I highly recommend it!
Thalys TGVs run hourly (generally leaving at about x55 from memory) with a few extras and take 1hr 25. Generally you can just turn up and go, but if you can, it's worth booking a day or two in advance, especially for more popular early/late trains, and those on Fri and Sun.
There are also a number of TGVs from Marne La Vallee and Roissy (Disneyland and Charles de Gaulle aiport respectively), and a few direct from Massy in the South Western suburbs.
