Hello Mr and Mrs. I guess you mean Oliva, in the south of Valencia and near Alicante. It's a long way from Santander that offers lots of places to see. You will surely go through Castilla León, Madrid, Castilla la Mancha and Comunidad Valenciana.
So you can see two of the major cities of Spain, Madrid and Valencia. In Castilla León you can visit Burgos, where one of the greatest gothic cathedrals of Spain is. In Castilla la Mancha there is Cuenca, a really nice and romantic place.
In my opinion, these are the musts.
That can be a really long trip. Not going to far from the main road from Santader to Oliva I wil visit:

Cuenca is no doubt a place to visit, just remember there's an old town and a new town. I recommend staying in the old town at the top of the hill...and, do pay visits to the art galleries and museums, as Cuenca is also known for them!
Valencia is another place worth visiting, lovely city, not too big and much charm.
Altea, small coastal city, a quick stop over~cute.
Don't want to overwhelm you with recommendations, but Spain is incredible~ENJOY!
San Lorenzo El Escorial. You can't miss the monastery where most of Spains' royalty are entombed.
