A couple places for Muaythai that I came across were in Pattaya. I also remember a ring set up off Pattaya 2nd street a couple years ago near Soi Diana.

Lumphini Park hosts a kick boxing stadium. This is a 5 minute tuk-tuk ride from the centre if the city. This park is a great place for all sorts of activities during the day and at night, it comes alive with a great market where, if you're devotee of kick boxing, you can buy the kick boxing shorts worn by the real deal fighters.
I didn't attend a fight,but from the look of the numbers attending, I would recommend you get there early.
Ratchadamnoen Stadium on saturday night is a 'not to miss'!
Wife & I go into Lumphini stadium Tuesday & Saturday nights for the fights. Usually about 8 bouts & a good atmosphere in the place. Ring side seats for farangs 2000baht but you're better off in the cheap seats with the crowd. Don't bet with the locals, they'll win.
The fighting down in Pattaya on walking St is for the tourists & c**p.
