thanks everyone for your adice given so far :)

we'r planning on leaving goa and heading south thru karnataka to kerala - if anyone knows any backpacker places or must sees any tips would be very helpful!

No need for package tours in South India (or most places in India), and backpacker places are plentiful. You can hop on buses or trains at will and head where you want. In every town you will find tons of cheap hotels to stay at that you can usual book on arrival. Places to consider heading to:
Hampi - A must see historical sight and relaxed little village in Karnataka, very much a backpacker hangout
Mysore - A fairly nice, bussling town in Karnataka, with a great market and an interesting palace. Worth a day or two of exploring.
Cochin - Beautiful historical port town in Kerela with lots to see and do - unmissable in my opinion.
The backwaters - Kerala's highlight and a place to relax for a few days. Towns to see them are primarily Alleppy and Kollam, but also Cochin
Varkala - great backpacker beach town in Kerela
There are also a few things to see in the highlands in Kerala, though I've never been so can't give any advice.

Apart from what Dego has mentioned, the golden traingle of Kerala which consist of Munnar(Hill station), thekkady(Wild life reserve) and Alleppy(centre of all backwater activites) is not to be missed. These places are separated by a travel of 3-4hrs from each other.
