So that you can differentiate easily between them and crisps, and not have to say 'hot chips'. With vinegar? Absolutely! And ketchup, must be Heinz.
Fish and chips in Britain is normally over-rated though, it is a bit greasy. The best fish and chips is in New Zealand, they seem to get the batter light and crispy rather than stodgy. Specially that little chippy in Waiheke island, it's great! They call chips 'hot chips' though.

fries (aka french fries) = those greasy things that go best with gravy and curd cheese

But French Fries (Freedom Fries? ) are those thin, spindly things - they're a sort of chip, but not all chips are fries. You'd never call steak cut chips fries, it wouldn't make sense. And what about oven cooked chips? If you called them fries you'd be done under the trade descriptions act, guv'nor. And curd cheese? What's that about? If you must have cheese on your chips it should be cheddar, or maybe red leicester at a pinch.
The Heinz ketchup is indeed by far the best ketchup. Fries are these thin crisps. Chips are bigger crisps. Crisps can be chips or fries.
