My friend and I are flying into New York at the end of October staying there a couple of days for the obligatory shopping!!! and then driving up the west coast up into Canada to Fredericton.

Looks to be a long drive - around 700 miles.

Does anyone have any ideas on what to do or see on the route - or even in New York.

Would be a great help.

I think I need clarification of your itinerary. Are you starting in New York and flying to the west coast and then driving to Frederickton, BC or drivng from NY to Frederickton, NB. Anyway here are some ideas.
NYC - to many to mention but here are some
Museums - The Cloisters (walk through Fort Tryon Park), Paley Center, Metropolitan Musuem of Art
Empire State Building, Statue of Liberty, Central Park, Battery Park, Brooklyn Heights,
Broadway plays, neighborhoods like Chinatown, Little Italy, and Greenwich Village ,and so many more.
www.menupages.com can give you ideas for restaurants. I like Bella Cucina and Genes for Italian in Manhattan and Miso Sushi for Japanese in Brooklyn Heights. The Comedy Cellar is a good comedy club in Greenwich Village.

If you are driving to NB, stops near I-95 are Mystic, Ct, and nearby casinos, Boston, Ma, Kittery, Kennebunkport, and Ogunquit, Me., Acadia National Park and be sure to stop at Fundy NP and Hopewell Rocks in NB.

Along the west coast, you must see San Francisco. If you are further south, then Big Sur, 17 Mile Drive, Hearst Castle, and north you'll find Redwood National Park, Rogue River rafting in Oregon, Oregon coastal scenery, Silver Falls State Park, Columbia River Gorge, Mt. Rainier National Park, Victoria and Butchart Gardens, and Stanley Park in Vancouver.
