I will be flying New Zealand to Paris early June, then to Athens for a group trip which concludes on 28/29 June in Athens. I intend to link with another group from New Zealand in Bolzona on 1st July to spend some time in the Dolomites then travel Bolzona to Paris to fly back to New Zealand. Any suggestions on which airlines, routes for this travel Paris back to Paris would be appreciated.

I suspect you mean Bolzano or, to give it its German name, Bozen. The nearest commercial airport is probably Verona, but I see that Ryanair.com fly from Paris (Beauvais - NB transfers) and Milan. That is one low cost option. I'm sure Air France/KLM partnership probably fly to Milan, Verona or even Venice from which you could get to Bolzano by train.
There is super walking above Bolzano, although the city itself is quite industrial in places. Try and visit nearby Trento - very historic and extremely interesting, Like Bolzano, it also has a cable car up into the Dolomites, or you can catch a local bus.
Greece-Italy is usually done by ferry and train, but since you got only about 1 day to make the trip I suggest you look into flights from Athens to Venice, Innsbruck or Milano. www.skyscanner.net is a good search engine for budget flights. But since Athens-Northern Italy is an unusual route look at the traditional big daddy airlines too, you can search them by using opodo, priceline, sidestep, orbitz and other such sites.
