In Vietnam I would say you have to check out these:
-Halong Bay
-Hanoi
-Hoi An
-Nha Trang/Mui Ne
-Saigon
-Mekong Delta

You can live quite well on $30. a day. I was just in Hanoi, and saw hostel signs advertising beds for as low as $5. in the Old Quarter, and meals are dirt cheap in both countries. I suggest you click on:
Thailand
Vietnam

I would take into consideration also the weather in both countries down south, you will be in the rainy season at that time of the year, for example Phuket and Saigon.
As you travel to central Vietnam and north the weather improves and you will find it quite warm and humid.
For other things to do,try visiting a orphanage or school and help out, not only is it rewarding but it has a huge impact on your life and to see how others live and can do without.
Both countries are great and are cheap and affordable,Vietnam is usually half the price of Thailand. But watch that $$$$ the better it gets against the Dong & Baht prices are going up,but compared to the west it's still very cheap.
Just do loads of reading up prior to leaving to get you familiar with what to look out for and what to avoid.
Happy Travels
