I can't remember the town with the tomato festival, but search for la tomatina. Merengue I know nothing about, and there are bull festivals all over Spain...

However, the most well known is San Fermin in Pamplona, it may be the one you're looking for, it's one week early in July. July 6th it starts if I remember it correctly.
Will you go by yourself or with friends?
It's not as fun as it sounds, I didn't like it much. People were too drunk and we met some guys who had lost a friend in the commotion. We went to every hospital, police station, meeting point, etc for days without finding a trace of him.
He was found later, he had left the town when he lost his pals (didn't call home or anything - stupid man).
So my views are of course tainted of these events.
But it is not a festival I'd recommend for a young girl on her own, to be frank.
But then I'm getting old maybe :)

La Tomatina is in Bunol, Spain on the last Wednesday in August each year. I THINK it starts at noon and lasts for one hour. Double check that part, but I think that sounds right.
