Trèbes - A backyard rose just for Irene by Beausoleil
Trèbes is a lovely town on the Canal du Midi near Carcassonne. We rented a gite on the Aude River one block from the Canal du Midi. There were shops and restaurants all within an easy walk and if you had a bicycle or car, there are a couple supermarkets in town. It would be a good base for exploring the Carcassonne area which is what we did. We later stayed directly in Carcassonne for a couple days just for fun. There is an amazing amount of things to do in the immediate area and much more if you're willing to drive an hour or so to sightsee.

Trèbes - One of the Gite chickens by Beausoleil
Our gite was directly on the Aude River and had a large yard. There was a wonderful vegetable garden, a rose garden and a pen with a few chickens in it. I love to paint chickens (pictures of them, not the actual birds) so I was delighted. This was between the Aude River and the Canal du Midi with lots of shops and restaurants within a couple blocks.

We didn’t but we should have . . . by Beausoleil
You see these rotisseries all over France. We've tried them a few times and they are fantastic. Be sure to get the potatoes roasting underneath them.

Roast Chicken at the Paris Street Market on blvd. Edgar Quinet by Beausoleil
You can look for markets; the Paris Tourist Office has schedules listed, but it's fun to just happen onto them as you walk around town. We were doing one of our Paris Walks and as we wandered, this beautiful and very busy market appeared.

Some Amazing chickens at Helmsley Walled Garden by Beausoleil
I am a great fan of chickens and these were beautiful. They have their own little area in the Walled Garden and seem to love visitors.

Picturesque rooster in Holker Hall Gardens by Beausoleil
Just above the Cascade at the Neptune statue we met a group of ducks, one rooster and a hen with two chicks. To me any chickens enhance a garden so this was thoroughly enjoyable.

Château de Cheverny - Fontaine Fables as a theme by Beausoleil
The Château de Cheverny has been continuously occupied for 600 years. There have been renovations, but it has always been a home to the family so the rooms are all furnished, many opulently. There are magnificent works of art including paintings, tapestries and statues so it's one of the more exciting châteaux to visit in the Loire. The gardens are very nice but do not rival Chaumont or Villandry. There are activities for children and a special (extra fee) museum for fans of Tin Tin. You can also observe the feeding of the hounds nearly every day except the odd times during hunting season when they are working. Check the web site for feeding times and dates. If you really want to see a superb performance at feeding time, drive to the Abbaye du Val des Choues where their hounds are exceptionally well trained.

It is a designated historic monument but is still privately owned and occupied. You have free run of everything except the actual farm house so we wandered all over marveling at the dry stone bories once inhabited by monks. It is now a charming family farm with rabbits, geese, a dog and several breeds of both chickens and ducks. It’s spring so there were lots of baby bunnies, chicks and goslings as well as two farm children. They have exhibits of old farm machinery, old building methods and a video (in the sheep fold) explaining all of it. At one place they have a very small borie with lots of flat stones where you can try building your own borie . . . not as easy as it looks!
